Red Bean Brioche



  1. Mix all ingredients except butter with mixer on low speed for 5 minutes.
  2. Add the butter and mix again with the mixer on low speed for 3 minutes and medium speed for 5 minutes until the dough is smooth.
  3. Rest the dough for 1 night in the chiller.
  4. Cut dough @50 gr and rest for 10 minutes.
  5. Fill the dough with Golden Brown red bean paste.
  6. Proof for 60 minutes. Once risen, top with black sesame seeds.
  7. Bake in an oven with an upper temperature of 190°C and a lower temperature of 190°C for 15 minutes.
